Mexican Kale Salad

This is a delicious salad that is packed with nutritious veggies and low on sugar and all that bad stuff! Salad Ingredients:  5 cups chopped curly kale  1 tsp olive oil  pinch of salt  1 cup black beans  1 cup corn  1 large red bell pepper, diced  1 jalapeƱo pepper, sliced  1/4 cup diced red onion  3-4 tablespoons cojita or feta cheese  fresh chopped cilantro to tatse Roasted Chickpeas Ingredients:  15 oz canned chickpeas  1 tablespoons avocado oil  1/4 teaspoon sea salt  1/2 teaspoon ground cumin  1/4 teaspoon smoked paprika  1/4 teaspoon ground turmeric  1/8 teaspoon cayenne pepper Cilantro Lime Dressing Ingredients:  3 tablespoons fresh lime juice  1/4 cup avocado oil or light olive oil 1 tablespoon white wine vinegar 2 teaspoons honey  1/2 teaspoon sea salt  1/8 teaspoon black pepper  2 tablespoons fresh chopped cilantro  Preheat oven to 400F. Drain, rinse, and blot chickpeas dry with a paper towel. Toss the chickpeas with olive/avoca
